Lean Mean And Green!

What’s your favorite color? For me I would have to say that I don’t have just one favorite color because my favorite color changes with whatever mood I happen to be  in.

Today it happens to be green. There is just something soothing about it. When I  see green I think health, vitality, prosperity and it always triggers my mind to think of nature.

It’s day six on the Whole 30 challenge and I’ve eaten my fair share of things that are green and although I’m feeling pretty good I will say that fatigue has hit hard the last couple of days!

IMG_5060I’ve slept great and although I had hopes of sleeping in this morning my body woke me up at the regular ole time of 4:30 raring to go!

It never ceases to amaze me the changes your body and mind goes through after you have indulged in way too much sugary crap and then switch back to eating clean. It’s like your body starts rebelling and well it can make you a little mean or at least irritable! 😈

Other than minor “meanness” and fatigue I feel like I’ve made it over the hump and really loving the leanness I feel along with the clearness of both my mind and complexion.

Loving this Whole 30 thing! Give it a try!!

My diet has pretty much consisted of lots of veggies, fruit , clean lean meats, eggs,nuts and seeds. I also have been drinking lots of water, getting adequate exercise and I’m going to insert a little subliminal message here…….

As I get this lean mean and green Saturday started I wanted to share something green and delicious with you.

Smoothies are near and dear to my heart and I love the fact you can throw whatever you like in a blender and enjoy your fruits and veggies in a different way!

1 Cup unsweetened  almond milk

A couple of handfuls of spinach and kale

1 Tbsp of almond butter

Ice cubes and water to adjust thickness

Blend, whirl and slurp!

I’m kicking it with green today baby all the way down to my shoe laces!

Sometimes You Feel Like A Nut!

Let’s get a little nutty here okay?  Coconutty  to be exact. I’ve come to adore these things along with the multitude of others.

Growing up the only coconut I can remember eating was my grandmas coconut cream pie and my memory of that still makes my mouth water! Her pies were amazing!

Coconut has certainly come into the limelight lately and it amazes of all the health benefits that comes from this miracle nut.

The coconut is naturally occurring in saturated fat but it is so good for you and provides a number of profound health benefits, such as:
•Improving your heart health
•Boosting your thyroid
•Increasing your metabolism
.Promotes a lean body and weight loss if needed.
.Supports your immune system.

Coconut oil even benefits your skin when applied topically and has been found to have anti-aging, regenerative effects. Woo hoo! What girl doesn’t love the thought of that?

I keep a huge jar on my vanity in my bathroom and use it for moisturizer and it’s an excellent eye makeup remover!

My kitchen cupboards have become obsessed with it also covering everything from coconut oil, coconut flour, and I recently found a cooking spray.

I even experimented in making my own coconut butter.. Oh Me Oh My I could literally swim in this stuff! 😍

Yes, one thing is for sure and that is that the coconut is very versatile. It can be eaten raw, dehydrated or in the form of butter. It’s excellent in baked goods and a plethora of sweet treats,

As much as I love these things I have to confess I’m hopeless in cracking these suckers open with grace and style…. Somebody Help Me!!!

Pretty huh?

I’m on Day 2 of The Whole 30 and got creative thanks to Pinterest this morning with my breakfast.

IMG_4994It was an egg white with 1 egg , sautéed sliced apples with cinnamon  omelet with you guessed it….Coconut butter! Perfection!

Day 2 hasn’t been too bad. I found myself a little tired this morning but that also could be contributed to information overload at work! 😯

Yes, sometimes you feel like a nut and sometimes you don’t or so the jingle goes but I think I will always be a little nutty it’s more fun. 😉

Perspective

Pray ….. Do you ever get stuck in a rut or feel like everyday seems to be just like the one before? I know lately I’ve been feeling this way. I wake up, have my coffee, do my morning workout, feed the dogs, go to work and well you know blah, blah, blah!

Those feelings of blah can really suck the life right out of you and before you know it you find yourself frustrated, agitated and somehow in this funk of whoa is me!

I’m going to be honest with you …I was there this past week and it wasn’t pretty!! 😯 but after throwing myself at Gods feet and asking for help, grace and mercy I began to see things in a different perspective all thanks to my dogs.

Most of my friends have children and I constantly hear them saying that they learn so many life lessons from them and I’ve always loved how children can take a seemingly complex adult problem and give you the brutally honest answer in the simplest form that leaves you thinking well….Duh!

Now my “kids” can’t talk except in the form of a bark, whimper or growl but I do learn from them everyday. In this case they helped me gain some perspective in how God wants me to see each day.

Let me introduce you to Buck (black) and Chuck (Red) . They are as different as night and day but they have one thing in common….they love me!

Stinkers they are but they are my little buddies.

The God lesson I walked away learning from these two is this….

Chuck has taught me that even though his day is pretty  much the exact same thing everyday it doesn’t matter. You wake up wagging your tail ferociously and eagerly ready to start the day by lavishing your master with kisses, high fives and joyous jumping around! It doesn’t matter that his day is going to be pretty much like the day before he’s just ecstatic that it’s a new day and he gets to share it with me come what may!

Buck being the senior and a lot more laid back has taught me that like me he’s a little too content in being swaddled underneath his blankets and actually needs some coaxing to come out and face the day but once he emerges he becomes my little shadow. I think the sweetest thing I learn from him is that he doesn’t even care about eating he just wants to be with me and he even has to make sure I’m watching him eat before he will even start!

Such sweet fur babies and here is my take on this perspective….

Unlike the pressures I place on myself God simply wants me to get up excited everyday to just be in His presence and to be eager to face a brand new day. He also wants me to follow Him so close that I desire His attention more than I want anything else…even if it is food.

Perspective is essential and it doesn’t take much to make you realize how blessed you are and how we should cherish and seize everyday before us knowing He loves us and wants the best for us!

Eat…. It’s August…It’s HOT and well all I really want to eat right now are salads. Salads in my opinion are just the perfect Summer time staple. I know most people tire of them but I don’t think I do. The beauty of salads are you can you throw just about anything in them you want and with all the fabulous freshness of Summer you can go wild!!

Sweat…. If I’m honest and I’m gonna be here I don’t wake up every morning , throw the blankets back and jump up ready to get sweaty. This is how it actually is most mornings….

Trust The Process!

Processa continuous action, operation, or series of changes taking place in a definite manner.

Trust the process the article on muscle gain tells me. Although this was an article on strength training and muscle gain it got me to thinking and applying this principle with trusting the process to more than just my workout. I’ve come a long way since I started the adventure of strength training at the first of this year. I’ve gone from a broken-hearted, gaunt and bony girl who used to cry herself to sleep at night to a bold and confident girl who feels stronger in more ways than just physically!

God continues to amaze me at just how He can bring such strength, growth and healing through the things in our lives that bring us pain. When you are walking through hurt it’s hard to see the possibility of how the shrapnel pieces of your broken heart could ever heal but God does and he too simply whispers in our ears to say”Trust the process”. Easy to do? NO! Worth it? You bet!

Throughout life we are always going to be called on to trust the process and it’s not always going to be easy but I believe you have to make a resolve with yourself and say I will press through, I will look forward and not look back, and I will not give up! When you make those proclamations to yourself there is nothing you can not accomplish and you will see the fruits of your labor even if it is simply gaining muscle definition you never had. 😉

I’m trusting the process and proceeding to all the great things that God has planned for me!

I couldn’t leave you without sharing something I created in the process 😉 of preparing my lunch for tomorrow.

If you continue to follow my blog I must warn you I turn into this mad scientist or at least this crazy blond with nerdy glasses who goes into her kitchen often with the hopes of creating a food masterpiece or at least something edible.

Thinking hard on what to create!

The challenge……Eggplant!

The creation…. Roasted Eggplant Parmesan Salad

Approx. 2 cups sliced eggplant

1 small sliced zucchini

1/2 cup frozen or fresh corn

1/4 cup chopped scallions

2 crushed rice cakes (you could do bread crumbs I’m just on a no bread thing at the moment)

3 -4 Tbsp marinara sauce ( Your choice I used Bertolli)

A variety of italian seasoning ( garlic salt, oregano, basil,etc)

1- 2 Tbsp Olive oil

1/4 cup chopped basil

Spinach

Drizzle olive oil and seasonings over veggies and spread onto baking sheet.

I roasted the eggplant, zucchini, corn and scallions at 425 for 35 minutes turning over half way through.

Remove from oven and mix veggies with crushed rice cakes, and marinara sauce and spoon over chopped spinach and basil.

Garnish with black olives and fresh tomatoes if desired!
