Lean Mean And Green!

What’s your favorite color? For me I would have to say that I don’t have just one favorite color because my favorite color changes with whatever mood I happen to be  in.

Today it happens to be green. There is just something soothing about it. When I  see green I think health, vitality, prosperity and it always triggers my mind to think of nature.

It’s day six on the Whole 30 challenge and I’ve eaten my fair share of things that are green and although I’m feeling pretty good I will say that fatigue has hit hard the last couple of days!

IMG_5060I’ve slept great and although I had hopes of sleeping in this morning my body woke me up at the regular ole time of 4:30 raring to go!

It never ceases to amaze me the changes your body and mind goes through after you have indulged in way too much sugary crap and then switch back to eating clean. It’s like your body starts rebelling and well it can make you a little mean or at least irritable! 😈

Other than minor “meanness” and fatigue I feel like I’ve made it over the hump and really loving the leanness I feel along with the clearness of both my mind and complexion.

Loving this Whole 30 thing! Give it a try!!

My diet has pretty much consisted of lots of veggies, fruit , clean lean meats, eggs,nuts and seeds. I also have been drinking lots of water, getting adequate exercise and I’m going to insert a little subliminal message here…….

As I get this lean mean and green Saturday started I wanted to share something green and delicious with you.

Smoothies are near and dear to my heart and I love the fact you can throw whatever you like in a blender and enjoy your fruits and veggies in a different way!

1 Cup unsweetened  almond milk

A couple of handfuls of spinach and kale

1 Tbsp of almond butter

Ice cubes and water to adjust thickness

Blend, whirl and slurp!

I’m kicking it with green today baby all the way down to my shoe laces!

Sometimes You Feel Like A Nut!

Let’s get a little nutty here okay?  Coconutty  to be exact. I’ve come to adore these things along with the multitude of others.

Growing up the only coconut I can remember eating was my grandmas coconut cream pie and my memory of that still makes my mouth water! Her pies were amazing!

Coconut has certainly come into the limelight lately and it amazes of all the health benefits that comes from this miracle nut.

The coconut is naturally occurring in saturated fat but it is so good for you and provides a number of profound health benefits, such as:
•Improving your heart health
•Boosting your thyroid
•Increasing your metabolism
.Promotes a lean body and weight loss if needed.
.Supports your immune system.

Coconut oil even benefits your skin when applied topically and has been found to have anti-aging, regenerative effects. Woo hoo! What girl doesn’t love the thought of that?

I keep a huge jar on my vanity in my bathroom and use it for moisturizer and it’s an excellent eye makeup remover!

My kitchen cupboards have become obsessed with it also covering everything from coconut oil, coconut flour, and I recently found a cooking spray.

I even experimented in making my own coconut butter.. Oh Me Oh My I could literally swim in this stuff! 😍

Yes, one thing is for sure and that is that the coconut is very versatile. It can be eaten raw, dehydrated or in the form of butter. It’s excellent in baked goods and a plethora of sweet treats,

As much as I love these things I have to confess I’m hopeless in cracking these suckers open with grace and style…. Somebody Help Me!!!

I’m on Day 2 of The Whole 30 and got creative thanks to Pinterest this morning with my breakfast.

IMG_4994It was an egg white with 1 egg , sautéed sliced apples with cinnamon  omelet with you guessed it….Coconut butter! Perfection!

Day 2 hasn’t been too bad. I found myself a little tired this morning but that also could be contributed to information overload at work! 😯

Yes, sometimes you feel like a nut and sometimes you don’t or so the jingle goes but I think I will always be a little nutty it’s more fun. 😉
