Sometimes You Feel Like A Nut!

Let’s get a little nutty here okay?  Coconutty  to be exact. I’ve come to adore these things along with the multitude of others.

Growing up the only coconut I can remember eating was my grandmas coconut cream pie and my memory of that still makes my mouth water! Her pies were amazing!

Coconut has certainly come into the limelight lately and it amazes of all the health benefits that comes from this miracle nut.

The coconut is naturally occurring in saturated fat but it is so good for you and provides a number of profound health benefits, such as:
•Improving your heart health
•Boosting your thyroid
•Increasing your metabolism
.Promotes a lean body and weight loss if needed.
.Supports your immune system.

Coconut oil even benefits your skin when applied topically and has been found to have anti-aging, regenerative effects. Woo hoo! What girl doesn’t love the thought of that?

I keep a huge jar on my vanity in my bathroom and use it for moisturizer and it’s an excellent eye makeup remover!

My kitchen cupboards have become obsessed with it also covering everything from coconut oil, coconut flour, and I recently found a cooking spray.

I even experimented in making my own coconut butter.. Oh Me Oh My I could literally swim in this stuff! 😍

Yes, one thing is for sure and that is that the coconut is very versatile. It can be eaten raw, dehydrated or in the form of butter. It’s excellent in baked goods and a plethora of sweet treats,

As much as I love these things I have to confess I’m hopeless in cracking these suckers open with grace and style…. Somebody Help Me!!!

Pretty huh?

I’m on Day 2 of The Whole 30 and got creative thanks to Pinterest this morning with my breakfast.

IMG_4994It was an egg white with 1 egg , sautéed sliced apples with cinnamon  omelet with you guessed it….Coconut butter! Perfection!

Day 2 hasn’t been too bad. I found myself a little tired this morning but that also could be contributed to information overload at work! 😯

Yes, sometimes you feel like a nut and sometimes you don’t or so the jingle goes but I think I will always be a little nutty it’s more fun. 😉

Trust The Process!

Processa continuous action, operation, or series of changes taking place in a definite manner.

Trust the process the article on muscle gain tells me. Although this was an article on strength training and muscle gain it got me to thinking and applying this principle with trusting the process to more than just my workout. I’ve come a long way since I started the adventure of strength training at the first of this year. I’ve gone from a broken-hearted, gaunt and bony girl who used to cry herself to sleep at night to a bold and confident girl who feels stronger in more ways than just physically!

God continues to amaze me at just how He can bring such strength, growth and healing through the things in our lives that bring us pain. When you are walking through hurt it’s hard to see the possibility of how the shrapnel pieces of your broken heart could ever heal but God does and he too simply whispers in our ears to say”Trust the process”. Easy to do? NO! Worth it? You bet!

Throughout life we are always going to be called on to trust the process and it’s not always going to be easy but I believe you have to make a resolve with yourself and say I will press through, I will look forward and not look back, and I will not give up! When you make those proclamations to yourself there is nothing you can not accomplish and you will see the fruits of your labor even if it is simply gaining muscle definition you never had. 😉

I’m trusting the process and proceeding to all the great things that God has planned for me!

I couldn’t leave you without sharing something I created in the process 😉 of preparing my lunch for tomorrow.

If you continue to follow my blog I must warn you I turn into this mad scientist or at least this crazy blond with nerdy glasses who goes into her kitchen often with the hopes of creating a food masterpiece or at least something edible.

Thinking hard on what to create!

The challenge……Eggplant!

The creation…. Roasted Eggplant Parmesan Salad

Approx. 2 cups sliced eggplant

1 small sliced zucchini

1/2 cup frozen or fresh corn

1/4 cup chopped scallions

2 crushed rice cakes (you could do bread crumbs I’m just on a no bread thing at the moment)

3 -4 Tbsp marinara sauce ( Your choice I used Bertolli)

A variety of italian seasoning ( garlic salt, oregano, basil,etc)

1- 2 Tbsp Olive oil

1/4 cup chopped basil

Spinach

Drizzle olive oil and seasonings over veggies and spread onto baking sheet.

I roasted the eggplant, zucchini, corn and scallions at 425 for 35 minutes turning over half way through.

Remove from oven and mix veggies with crushed rice cakes, and marinara sauce and spoon over chopped spinach and basil.

Garnish with black olives and fresh tomatoes if desired!

Excuses Or Results?

Well excuuuuussse me!

Yea we all have those things called excuses for everything we don’t want to really do. I know I’m most certainly guilty and in any given day I can find in my mind’s eye a perfectly logical excuse for a number of things. I think unfortunately its human nature to give excuses for every selfish thing we do. For example ….you catch me eating straight out of the ice cream carton with the largest spoon that exists in the utensil drawer and my excuse would be that I had a bad day at work or you ask me if I worked out today and I said no because my legs were sore or my favorite workout socks were dirty!!! I could go on and on but the thing with excuses are they never get you anywhere they only keep you going in circles and then you find yourself dizzy from all that spinning around.

Before I decided to commit to doing Chalean Extreme this year I asked myself was I going to offer up a bunch of crazy excuses as to why I couldn’t do it or was I going to be passionate and determined enough that I wanted to see results? My decision was to see results and I got them! IMG_4165

I don’t think I have ever had muscle definition in my arms EVER! The process of all this has not been easy for this girl who has struggled with disordered eating for most of her life. The concept of building muscle where puny flabby skin once just hung on bones and the fact that I’ve had to start eating beyond  my comfort zone to be able to nourish and refuel my body throughout this program has sometimes thrown me into a panic but having the mindset of NO EXCUSES I decided to push through! It’s been very rewarding!

The Beachbody community has helped and encouraged me so much through their support and their products that it has stirred this new-found passion for not only myself but having the desire to pass it on to others. I did not enter into this program as a get rich scheme, to push products, or to come across as some know it all when it comes to health and fitness. My desire is to help people taste and see how health and fitness can change your life from the inside out! I believe that once you get motivated and you decide to commit to it that it’s like lighting up one of those sparklers you see so much this time of the year. It’s contagious and I’ve decided that excuses are just not going to work for me because I would rather see the results!

I believe we make-weight loss and getting healthier so much more complicated than it really is and that’s’ why last week I started my own personal challenge with a friend who I shall call Guinea. Yes she volunteered to be my guinea pig and she wanted to remain anonymous so I’ve affectionately given her that name.

Last Monday I had Guinea take her before pics and measurements and she then started her journey to a healthy lifestyle.

The challenge I laid before her was this…..

  • 1 Shakeology shake a day
  • 2 other meals plus a snack a day…her choice as long as they were healthy choices!
  • Doing Chalean Extreme (strength portion only )with me 3 days a week
  • Finding some kind of cardio she enjoyed  at least 2 days a week ( she informed she did not like traditional cardio like running, treadmill or the like so I let her choose her own)

Not a hard challenge at all so she put away the excuses and accepted!

Although we are not weighing in every week she wanted to just get a glimpse of her progress and I’m proud to report…….

I’m so proud of her and can’t wait to see all the changes that are going to take place in her the next 90 days.

Getting fit does not mean you have to spend 8 hours a day in a gym, spend an insane amount of money on equipment or give up every food you love but it does mean you have to ditch the excuses and decide you want to commit to seeing the results!

I remind myself of this verse every time I want to give into excuses……

1 Corinthians 6:19-20 Don’t you know that your body is the temple of the Holy Spirit, who lives in you and who was given to you by God? You do not belong to yourselves but to God; 20 he bought you for a price. So use your bodies for God’s glory.
